The Tin Shed Distillery in Adelaide, South Australia is a place where determination, dedication and an unshakeable belief is starting to pay off. The distillery is all about passion and a spiritual journey. Every step of the process is performed by hand from milling the malt, stirring the mash, making the cut and moving the barrels, to judging which casks to use, bottling, labelling and shipping bottles. The distillery was established in 2013 and has mainly been releasing single cask whisky to this point. Most of the releases are sold out in very short time and become either historic and memorable drams with friends or sit pride of place on a whisky cabinet. The distillery produces three brands of spirit. Iniquity….the whisky, Requiem….the rum and Piotr….the vodka.
Originally filled into a single Shiraz 225 litre cask in November 2017, six months prior decanting the cask was topped up with 2 YO Heaven Hill bourbon cask whisky to add complexity and take the sharp edge off the Shiraz cask whisky. Bottled at 60.1% ABV. A simply astounding whisky with soft round palate and wonderful long after notes.
Our Tasting Notes
Nose: Sherry sweetness contends with polished oak and orange marmalade, Some citrus notes and caramel sweetness.
Palate: Creamy Sherry, toffee sweetness, red berries and polished oak.
Finish: Malty and chewy with soft vanilla caramel, raisins and plum pudding.
