Lindores Abbey is officially recognised site of the first recorded distillation of Scotch whisky. It was back in 1494 that King James IV commissioned Brother John Cor at Lindores Abbey to make aqua vitae with eight bolls of malt. After a break of almost 523 years the stills at Lindores Abbey Distillery are flowing. Twenty years in the making and we can now enjoy a whisky again from where it all began.
This bottling is part of the Casks of Lindores Series. These series bottlings are to highlight the Lindores spirit with three differently treated casks. This edition highlights the STR cask process. This allows the spirit to be exclusively aged in shaved, toasted and re-charred red wine barriques.The first release in the series focussed on bourbon casks and the vanilla rich notes they impart, this limited edition shows off a fruit-forward style from Lindores Abbey. Bottled un-chillfiltered at 49.4% ABV.
Our Tasting Notes
Nose: Ripe plums, freshly cut oranges, creamy Highland toffee, hints of summer berries and toasted oak.
Palate: Summer fruits, red berries, stewed plums, sweet. cereals, honey and earthy spices.
Finish: Creamy blonde caramel, dried dark fruits and soft baking spices.
