North Fort Whisky is a range of Australian Single Malt whiskies produced by Manly Spirits Co. Distillery, Sydney’s Northern Beaches’ first artisan distillery.
Following distillation in Manly Spirit Co. gorgeous 1000L and 1500L copper pot stills, the clean full-bodied spirit is matured in a selection of French or American oak casks before being finished in classic Australian wine varietal casks.
Monitored by their Distillery team to ensure that the whisky is decanted at the optimum level of maturity, each whisky is bottled as a single cask and individually numbered to identify the exact cask and bottle.
Reflecting flawless craftsmanship and attention to detail that connects terroir, people and place, Manly Spirits Co. signature whisky style presents an approachable fresh taste profile that is enjoyed by first-timers and connoisseurs alike.
Casks
Aged to perfection, expressions of the whisky range have been matured in a selection of casks that capture the individual influence of the wood. These include; Ex-Bourbon American oak casks, Ex-Fortified wine French-oak casks and Ex-Australian Wine casks – Pinot Noir and Shiraz
Age
An Australian single malt whisky must be aged for at least two years, to be called a whisky. All Manly Spirits Co. North Fort Whisky range is aged for a minimum of two years, and their Head Distiller will determine when is the optimal time to share each whisky with the world.
This is of course with the exception of our North Fort ‘White Dog’ Malt Spirit. They couldn’t wait to share this fresh, young, malty spirit with you.
Finishing
Variety is the spice of life! For some of Manly Spirits Co. whiskies in their final stages of maturation, their expert Distilling team will use various finishing techniques to create new and interesting variants.

Official Tasting Notes
Distinctively aromatic and full-bodied, with generous grain and cereal notes of Australian malted barley, wonderful in a whisky buck or Old fashion cocktail.
