Originally a mill, and for many years a tannery which specialized in rabbit skins, the distillery building dates back to the 1700s and is a testament to the industry of the area. The Dublin Liberties distillery boasts six tonne mashing, triple distillation with capacity for 10k litres in the first still and 6k litres in the second and third still, and capacity to produce over 700,000 litres of whiskey annually. They are currently crafting 100% malted barley to be laid down to produce their award-winning Dubliner and Dublin Liberties whiskeys.
This is the second release in this range of The Dublin Liberties Irish Whisky. The whisky has been matured for no less than 10 years and has also enjoyed a finishing period in Sherry casks hand-picked by Master Distiller Darryl McNally.
Our Tasting Notes
Nose: Creme anglaise, cinnamon spice and plenty of big bold fruity sherry notes.
Taste: Rum and raisin dark chocolate, toasted nuts and sherry fruitiness.
Finish: Lingering toasted nuts and some dried fruits.
